I had tortellini with pesto sauce and a light sprinkling of grated cheese. Mixed veggies for the side dish, and an apple with a bit of peanut butter on it for dessert.

Last night I cheated. I used Classico Vodka Sauce for the pasta. I know, I know. You can flog me later. I DO have a broken ankle, you know. The better part was that I made a salad to go with. I discovered the new Mediterranean Blend cheese crumbles from Kraft. (It has provolone, feta and parmesan) I used that, coarse cut black olives, chopped Italian dry salami and iceberg lettuce blend and made a really good salad. Topped it off with croutons and dressing. I liked it better than the pasta, personally. Jarred sauces really aren't my style, but I can't stand for long. Hope you'll forgive me. Meat did.
I've been on night shift and haven't slept worth a shit. I'm off tonight and really crashed hard this morning. Just got up so I have no idea what I'll do for dinner, but I dropped in here for a few ideas... This is a great thread for seeing that whatever you do for dinner... It's acceptable and normal, whatever it is... I'm loving this community more and more...

Just the kids and I for dinner tonight. Meat is out Christmas shopping. I made sandwiches on Kaiser rolls. Roast beef, corned beef, genoa salami and provolone cheese. served with baked cheddar and sour cream lays potato chips. Not real fancy, but it tasted good and the kids ate it.

What kind of Ramen? What flavor? You can actually add some stuff and make that a pretty filling meal that doesn't taste too bad...

Any leftover take out food that has chicken or beef in it? You can chop up the meat and add it to the ramen after you skim off some of the water and add the seasonings and maybe some canned or frozen veggie. Then salt and pepper to taste. Better nutritional content than plain ramen...
