Dinner tonight is penne pasta with sausage.
Sear 1 to 1 1/2 pounds Italian sausage in sauce pan. Cook just to done. Remove from pan. Add 2 tbs. olive oil to sauce pan and heat to medium. Add 1 diced onion, 1/4 cup minced garlic, 1 jar mushrooms and one can chopped black olives. Cook to tender. Add one can tomato paste, 1 tbsp. salt, pepper, 1 tsp Italian Seasoning, 2 tsp. sugar and 2 cans diced tomatoes. Cook to bubbling. Add a large can of crushed tomatoes and mix well. Reduce to low heat and add 1/4 cup parmesan cheese and replace sausage. Simmer as long as possible. Taste test to judge need of garlic powder, onion powder, additional salt, pepper. etc.
In pasta pan, add 2 tbsp. olive oil to bottom of pan as well as 1/2 tbsp. of salt, then fill with water and boil. Cook pasta to al dente and drain. Serve immediately covered in sauce with additional parmesan available. Garlic bread encouraged as well as a salad.
