In most localities there are typically desecration of a corpse laws. You could probably also be charged with breaking and entering, theft, etc.

Actually, the worst would probably be encountering Zombies, being partially eaten, then caught by the cops, sent to jail, and ass-raped by massively endowed inmate. With herpes.

Grave robbery is usually way against the law. Last I heard it's as bad as kidnapping.
Zombieness is very serious business. I'm a mortician, I know. You have only a certain amount of time to either get the body in a cooler (morgue) or get it embalmed. The cooler will retard zombie brain function to the point of incapacitation, the embalming fluid outright kills it. That's why when you have a new body to embalm the first thing you do is wire the mouth shut. And you'd better be quick about it. The actual point of zombiefication varies from body to body but it can happen very quickly.
