Technically, you can't REALLY remove internet explorer, as it is intigrated into the Windows explorer. You can remove it to the point where you can't open it, but it might fuck up the rest of your internet based apps.
Well, I halfway take back what I said, you can remove it NOW, but you didn't used to be able to without fucking shit up, or having Windows automatically reinstall it, thinking that a component was damaged.

If you no longer wish to use Internet Explorer
The easiest route would be to make your Mozilla browser the default browser and simply stop using Internet Explorer. You can also consider these other options:
Secure Windows and Internet Explorer
The SANS institute recommends the following precautions for Windows users. Remember that parts of Internet Explorer can be used by other programs, so users should follow the advice even if they don't click on the blue e.
* Upgrade to at least Windows XP Service Pack 3, Windows Vista SP2, or Windows 7
* Enable Windows automatic updates [1]
* Upgrade to Internet Explorer 8
* Regularly update all plugins
* Configure Internet Explorer security settings as recommended by SANS and CNET, including turning on DEP and Protected Mode and the Medium-High security setting for the Internet zone [2]
* Use a standard account instead of an administrator account for browsing [3]
* Use antivirus and anti-spyware software
* Use a hardware or software firewall
* Use an alternative browser instead of Internet Explorer
I have to say I agree with them. If you have no future plans to use IE again, just disable it's access to the internet through your firewall, and just temporarily change it if a sepcific application needs to use it(not really sure if you would have to change that, since I've never disabled it personally)
