There was a fatal casualty tonight.

Kanzen: So for supper last evening; I spent an hour and a half making this awesome homemade chili, got everything I wanted perfect in it. So cut to now…
Kanzen: I'm carefully and tediously spooning the left-overs (about three-quarters of the pot left) into a ziplock standing bag. I get all of it, without a drop missed.
Kanzen: I'm so fucking proud of myself for the patience to do it. I'm thinking, man I can eat for the next two days off of this. Maybe some Chili & Eggs in the morning.
Kanzen: So as I go to put the pot back on the stove, I turn away for not even a half second and the fucking bag tips over.
Kanzen: Half the chili on the floor and counter. Some on the cat.
Kanzen: God fucking dammit.
Bangles: That's horrible, man.
Bangles: Was it good chili?
Kanzen: Some of the best I've ever made. Everything was perfect. The onions and green peppers would just perfectly cooked. It was a work of fucking art.
Kanzen: I could of sold that shit by the bowl and gotten return customers.
Kanzen: I spent a fucking hour and a half in the kitchen, never leaving, tending to every part of it. Perfectly browned ground hamburger mixed with sirloin.
Bangles: Damn.
Kanzen: 2lb Ground Beef (80/20) + 1lb Ground Sirloin (90/10) + yellow vidalia onion coarsely chopped + two bell peppers coarsely chopped + 12oz can of dark red kidney Beans + 12oz can of light red kidney beans + 12oz can of diced tomatoes with green chiles + 6 cups of V8 Spicy Hot + 1 cup of Sriracha Paste.
Bangles: Hmm...
Kanzen: 2 tbsp flour + 2 tsp cane sugar + 1 tbsp garlic powder + 1 tbsp onion powder + 1 tbsp cayenne + 2 tbsp chili powder + 2 tsp cumin + 1 tsp of basil and a tsp of fresh cracked pepper.
Kanzen: I forgot, a 8oz can of tomato paste.
Kanzen: I also forgot, + 6 ancho peppers.
Bangles: Sounds sizable. How much is left?
Kanzen: *goes to copy and paste this into his text editor to make a viable post in the spam.*
Kanzen: About enough for one last bowl.
Kanzen: Which will be salted with my tears.

If I had a flag to fly from my porch, it would be at half-staff. Sorry Bangles.

Food is important.
I was getting a burrito and it randomly fell off and landed upside down on the chair.
Totally ruined my day. That burrito could have been awesome.
My girlfriend offered to get me a new burrito, to make up for the chair burrito.
But, I said no. And I ate the chair burrito. And it was awesome.
But still, made me sad.

Now if you don't have the spices on hand, and don't want to blow about ~$14 on the seasonings and flour pick up Carroll Shelby's Original Texas Chili Mix, but you will still have to get the Sriracha Paste (it comes in a plastic jar with a green lid, the squirt bottle stuff is pretty crumby).

1. Chop the onion and bell peppers into large chunks keep aside.

2. Use a large 12-4qt stock pot, if you're worried about stuff sticking put a little bit of veg oil in, let the pot warm for a bit and then use the oil to coat the bottom and lower sidewalls. Use medium heat from this point on.

3. Once the bottom is coated, toss the ground beef and ground sirloin in and stir constantly with a fork to break it all up and toss in the onions and peppers.

4. Just keep stirring and stirring until everything is broken up and browned perfectly. This will take a while.

5. When it is all browned and the onion and bell peppers are just right, switch to simmer, pour in the dark kidney beans, the light kidney beans, diced tomatoes with green chile, and then mix it for a while until dispersed. Now at this point you toss in the Ancho, here, they sell them whole with seeds. I just tear them apart above the pot and make sure to sprinkle those delicious seeds everywhere. Anchos tend to be sweet and smoky, but with a mild heat to them. It depends on who the retailer is.

6. Once it is all mixed, pour in the V8 Spicy Hot, and then the tomato paste. Stir until dispersed and you have reached a thick consistency.

7. Toss in the spices one at a time, stirring well in between each. Now if you want to go the lazier but slightly cheaper route there is a brand of chili mix called Carroll Shelby's Original Texas Chili Mix, it is surprisingly good and cheap (like it is $2.49 here) and it works pretty damn well. Most grocery stores carry it, I have yet to encounter one in Michigan that doesn't have it (local, Meijer's, Krogers, Walmart, etc.)

8. After it is dissolved in, pour in the half cup of Sriracha's Paste. Use the paste, not the squirt bottle stuff, it lacks those delicious seeds.

9. Let it simmer for a while and constantly stir. After about half an hour or so, it should be ready to eat.

10. Then spill half the pot onto the floor and cat, and then text a member of the quadfecta to whine about it.
